Malaga, Alicante, Girona, Granada, Cordoba, Valencia, Murcia, Seville, San Sebastian and Barcelona are all worth visiting. I have to admit though, that some of these places are some distance apart, so you may not be able to do them all in one trip.

I don't know when you are visiting or where you're flying or driving into nor your likes and dislikes, but Madrid is amazing, but it's a capital city so you need more than a day. Barcelona is also fabulous, Gaudi's architecture is stunning, I don't like it personally but it's something to be seen, Santiago de Compostela is a very religious place, The Alhambra Palace has to be seen, but book your tickets first, Cadiz is great if you like windsurfing, wild, deserted beaches etc. Malaga is very special, but I'm prejudiced because I live there.
Wherever you go enjoy yourself, take your time to enjoy the atmosphere, the food and try to talk to the locals. Your holiday will be so much better for mingling with the Spaniards.
